The Tzeltal are a group of indigenous people who descended from the maya and live in the highlands of Chiapas. The land is home to rich deposits of marble, lush forests, and shady slopes perfect for slowly growing coffee cherries. We roast this further into a medium profile to bring out complex caramelized sugar notes tasting of chocolate and caramel.
